Ayam Bumbu Kuning: A Flavorful Indonesian Chicken Dish

Ingredients:

  • 1 kg chicken (cut into pieces)
  • 3 cloves garlic
  • 1 tablespoon coriander seeds
  • 3 bay leaves
  • 2 cm turmeric root
  • 1 cm galangal (crushed)
  • 1 cm ginger (crushed)
  • 1 stalk lemongrass (crushed)
  • 2 kaffir lime leaves
  • Salt, to taste
  • Royco Chicken Seasoning (or other chicken seasoning)

Instructions:

  1. Prepare the Spice Paste: Begin by finely grinding the garlic, coriander seeds, and turmeric root into a smooth paste. You can use a mortar and pestle or a food processor for this step.

  2. Sauté the Spice Paste: Heat a small amount of oil in a large pan over medium heat. Add the ground spice paste, bay leaves, kaffir lime leaves, lemongrass, ginger, and galangal. Sauté until the mixture becomes fragrant and the spices are well-cooked, about 5-7 minutes.

  3. Cook the Chicken: Season the spice mixture with salt and Royco Chicken Seasoning. Add the chicken pieces to the pan and stir well to coat them with the spices. Pour in enough water to cover the chicken.

  4. Simmer: Bring the mixture to a boil, then reduce the heat to low. Simmer gently until the chicken is cooked through and the water has reduced, leaving a thick, flavorful sauce. This should take about 30-40 minutes.

  5. Adjust Seasoning: Taste the sauce and adjust the seasoning with additional salt if necessary.

  6. Serving Options: The dish can be enjoyed as is, or you can let it cool and store it in the refrigerator for later use. To serve, you may choose to fry the chicken for a crispy texture or enjoy it as a tender, flavorful dish directly from the pot.

Tips: For an extra touch of authenticity, serve with steamed rice and a side of fresh vegetables. This dish is perfect for both everyday meals and special occasions.
