Instructions

  1. Prepare the Chicken:

    • In a large pot, combine the chicken pieces with bay leaves, smashed lemongrass, and galangal. Add the water and bring to a boil. Reduce the heat and simmer until the chicken is cooked through and the flavors are well absorbed, about 30 minutes.
