Main Ingredients:

  • 2 mackerel fish (ikan kembung)
  • 1 lime
  • 1 tablespoon salt

For the Marinade:

  • 5 cloves garlic
  • 3 shallots
  • 1 thumb-sized piece of ginger
  • 1 thumb-sized piece of galangal
  • 1/2 teaspoon coriander seeds
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 lime

For the Sambal Terasi:

  • 5 red chilies, finely chopped
  • 2 shallots, sliced
  • 1 clove garlic, sliced
  • Sugar, to taste
  • Salt, to taste
  • A pinch of roasted shrimp paste (terasi bakar Medan)
  • 1 lime

Preparation Steps:

1. Prepare the Fish:

  • Clean the mackerel thoroughly, making a slight incision in the belly.
  • Rub the fish with lime juice and salt. Let it marinate for 15 minutes to eliminate any fishy odor and to enhance the flavor.

2. Make the Marinade:

  • Blend garlic, shallots, ginger, galangal, coriander seeds, black pepper, salt, and lime juice with a little water until smooth.
  • Generously coat the mackerel with the marinade, ensuring it is well-covered. Allow it to marinate for 30 minutes, letting the flavors meld beautifully.

3. Grill the Fish:

  • Heat a non-stick skillet (teflon) and lightly grease it with oil to prevent the fish from sticking.
  • Place the marinated fish on the skillet and apply the remaining marinade on the surface of the fish.
  • Cover the skillet and grill the fish over medium heat for 15 minutes. Avoid flipping the fish too soon to prevent it from breaking apart.
  • After 15 minutes, gently flip the fish and grill for another 10 minutes, keeping the skillet covered.

4. Prepare the Sambal Terasi:

  • Sauté the sliced shallots and garlic in hot oil until fragrant.
  • Mix in the chopped red chilies and roasted shrimp paste, and season with sugar and salt to taste.
  • Squeeze fresh lime juice into the sambal mixture, stirring well to combine all the flavors.

5. Serve:

  • Once the fish is perfectly grilled, transfer it to a serving platter.
  • Serve the grilled mackerel with the sambal terasi on the side.
