Indonesian Ground Beef Stew with Crispy Potatoes

Semur Daging Sapi Giling (Ground Beef Stew)

Ingredients:

  • 500 grams ground beef
  • 2 potatoes, thinly sliced and fried
  • 2 tomatoes, sliced
  • 1 large onion, sliced
  • 4 cloves garlic, minced

For the Sauce:

  • 1 tablespoon oyster sauce
  • 2 tablespoons tomato sauce
  • 3 tablespoons sweet soy sauce (kecap manis)
  • ½ teaspoon nutmeg
  • Salt and pepper, to taste
  • Water, as needed
  • Fried shallots, for garnish
  • Cooking oil, for sautéing

Instructions:

  1. Sauté the Aromatics: Heat a generous amount of cooking oil in a pan over medium heat. Add the sliced onion and minced garlic, and sauté until they become fragrant and translucent.
  2. Brown the Beef: Add the ground beef to the pan with the onions and garlic. Cook, stirring occasionally, until the beef is browned and no longer pink.
  3. Season the Beef: Stir in the sweet soy sauce, oyster sauce, tomato sauce, and nutmeg. Season with salt and pepper to taste.
  4. Simmer with Potatoes: Pour in enough water to cover the ingredients. Add the fried potato slices. Allow the mixture to simmer gently until the sauce thickens and the flavors meld, about 20-30 minutes. Adjust seasoning as needed.
  5. Add Tomatoes: When the stew is nearly ready, stir in the sliced tomatoes and cook for an additional 5 minutes, allowing the tomatoes to soften and blend into the sauce.
  6. Serve: Transfer the Semur Daging Sapi Giling to a serving dish and garnish with a generous sprinkling of fried shallots.
