Kupat Tahu Magelang: A Delicious Indonesian Delight

Ingredients:

For the Broth:

  • 800 ml water
  • 3 cloves garlic, crushed
  • 3 kaffir lime leaves
  • 3 bay leaves
  • 1 thumb-sized piece of galangal, crushed

  • 6 red bird’s eye chilies (or to taste)

  • Kupat (rice cakes)
  • Fried tofu
  • Boiled cabbage
  • Boiled bean sprouts
  • Vegetable fritters
  • Chopped scallions or celery
  • Fried shallots

Instructions:

  1. Prepare the Broth:

    • In a pot, combine all the ingredients for the broth: water, crushed garlic, kaffir lime leaves, bay leaves, crushed galangal, crushed lemongrass, tamarind pods, palm sugar, granulated sugar, salt, soy sauce, and sweet soy sauce.
    • Heat the mixture over medium heat, stirring occasionally until it reaches a boil. Once boiling, reduce the heat and let it simmer for a few minutes.
    • Turn off the heat and let the broth cool slightly. Strain the broth through a fine sieve to remove the solids. Set aside.
  2. Prepare the Peanut Sauce:
