Ingredients:
For the Broth:
- 800 ml water
- 3 cloves garlic, crushed
- 3 kaffir lime leaves
- 3 bay leaves
- 1 thumb-sized piece of galangal, crushed
- 1 stalk lemongrass, crushed
- 2 tamarind pods
- 25 grams palm sugar
- 1 teaspoon granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon soy sauce
- 2 tablespoons sweet soy sauce
For the Peanut Sauce:
- 2 handfuls roasted peanuts
- 6 cloves garlic
- 6 red bird’s eye chilies (or to taste)
For the Toppings:
- Kupat (rice cakes)
- Fried tofu
- Boiled cabbage
- Boiled bean sprouts
- Vegetable fritters
- Chopped scallions or celery
- Fried shallots

Prepare the Broth:
- In a pot, combine all the ingredients for the broth: water, crushed garlic, kaffir lime leaves, bay leaves, crushed galangal, crushed lemongrass, tamarind pods, palm sugar, granulated sugar, salt, soy sauce, and sweet soy sauce.
- Heat the mixture over medium heat, stirring occasionally until it reaches a boil. Once boiling, reduce the heat and let it simmer for a few minutes.
- Turn off the heat and let the broth cool slightly. Strain the broth through a fine sieve to remove the solids. Set aside.

Prepare the Peanut Sauce:
- In a mortar and pestle or a food processor, grind the roasted peanuts, garlic, and red chilies into a smooth paste. Adjust the chili quantity according to your heat preference.
- Transfer the peanut sauce to a bowl and set aside.

- On a serving plate, arrange the kupat (rice cakes), fried tofu, boiled cabbage, boiled bean sprouts, and vegetable fritters.
