Title: Lemper Ayam (Indonesian Sticky Rice with Chicken Filling)
Ingredients:

For the Sticky Rice:
- 600 grams glutinous rice (beras ketan)
- 400 ml coconut milk (from 1 coconut)
- Salt, to taste
- 2 bay leaves (daun salam)
- 1 stalk lemongrass (sereh)
For the Filling:
- 1/4 of a chicken breast (dada ayam)
- 300 ml coconut milk
- Spice Paste (Bumbu Halus):
- 1 teaspoon coriander seeds (ketumbar)
- 1 candlenut (kemiri)
- 2 cloves garlic (bawang putih)
- 2 shallots (bawang merah)
- 1 bay leaf (daun salam)
- 1 stalk lemongrass (sereh)
- 2 cm galangal, smashed (lengkuas)
- 1 teaspoon granulated sugar
- 1 teaspoon tamarind paste (asam jawa)
- Salt, to taste
Steps:

Prepare the Sticky Rice:
- Rinse the glutinous rice until the water runs clear. Steam the rice for 15 minutes until partially cooked.
- Remove the rice and mix with coconut milk and salt. Return the rice to the steamer, adding the bay leaves and lemongrass. Steam for an additional 15 minutes until fully cooked and fragrant.

Prepare the Chicken Filling:
- While the rice is steaming, boil the chicken breast until cooked. Shred the chicken into small pieces.
- For the spice paste, blend the coriander seeds, candlenut, garlic, and shallots into a fine paste.
- In a pan, heat some oil and sauté the spice paste until fragrant. Add the bay leaf, smashed galangal, and lemongrass. Pour in the remaining coconut milk and any reserved chicken broth.
- Add the shredded chicken to the pan and cook until the liquid has reduced and the mixture thickens. Adjust seasoning with sugar, salt, and tamarind paste to taste. Set aside to cool.

Assemble the Lemper Ayam:
- Press a layer of the steamed sticky rice into a greased baking dish, compacting it firmly.
- Spread the chicken filling evenly over the center of the rice layer.
- Top with another layer of sticky rice, pressing it down to seal the filling inside.

Cook and Serve:
- Steam the assembled lemper ayam for an additional 15 minutes to ensure everything is well-cooked and flavors meld together.
- Once done, let it cool slightly before cutting into pieces. Alternatively, you can wrap the lemper ayam in banana leaves and grill them for a smoky flavor.
