Lontong Tahu: A Delicious Indonesian Delight

Ingredients:

  • 2 packages of lontong wrapped in banana leaves
  • 1 small chili pepper (cabe rawit)
  • 3 tablespoons fried peanuts
  • 1 clove garlic
  • Palm sugar, to taste
  • Salt, to taste
  • Warm water, as needed
  • 2 pieces of fried tofu, cut into cubes
  • Cabbage, thinly sliced
  • Fried shallots, to garnish
  • Sweet soy sauce (kecap manis), to taste

Instructions:

  1. Prepare the Sambal: In a mortar and pestle, combine the small chili pepper, garlic, salt, fried peanuts, and palm sugar. Grind these ingredients together until a smooth paste forms. Gradually add warm water while continuing to grind, just enough to achieve a creamy consistency. Taste and adjust the seasoning as needed.

  2. Assemble the Dish: Slice the lontong into bite-sized pieces and arrange them on a serving plate. Cut the fried tofu into cubes and scatter them over the lontong. Add the thinly sliced cabbage on top of the tofu.
