Mie Ayam: Savory Indonesian Chicken Noodles

Ingredients:

Marinated Chicken:

  • 250 grams chicken breast fillet, cut into small pieces
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon soy sauce (kecap asin)
  • 1/2 teaspoon ground pepper

Cooking Ingredients:

  • 7 cloves garlic, coarsely chopped
  • 6 shallots, coarsely chopped
  • 1/2 large onion, coarsely chopped
  • 2 stalks green onions, sliced
  • 7 bird’s eye chilies, sliced (adjust to taste)
  • 1 teaspoon oyster sauce
  • 1 teaspoon sweet soy sauce
  • 1 teaspoon soy sauce
  • 1 pack flat egg noodles (I used Tjutjut brand)
  • 2 bunches bok choy, cooked until wilted
  • 200 ml cooking oil
  • Water, as needed for boiling noodles, bok choy, and making broth
  • Salt, sugar, chicken bouillon (Royco), and ground pepper, to taste

Instructions:

Prepare the Chicken:

  1. Marinate the Chicken: In a bowl, combine the chicken pieces with sweet soy sauce, soy sauce, and ground pepper. Let it marinate in the freezer overnight.

  2. Cook the Topping: Heat 200 ml of cooking oil in a pan over medium heat. Add the coarsely chopped garlic and sauté until slightly browned. Reserve a bit of the oil for boiling the noodles.

  3. Add Vegetables and Chicken: Add the coarsely chopped onions and bird’s eye chilies to the pan. Sauté until fragrant. Add the marinated chicken pieces, oyster sauce, sweet soy sauce, soy sauce, salt, sugar, chicken bouillon, and ground pepper. Cook until the chicken is fully cooked. Finally, stir in the sliced green onions and cook until slightly wilted. Transfer the mixture to a serving plate.

Prepare the Noodles:
4. Boil the Noodles: In a pot of boiling water, add the reserved oil from the garlic sautéing. This will help prevent the noodles from sticking together. Add a pinch of salt to the water. Cook the egg noodles according to the package instructions until al dente. Drain and set aside.

Prepare the Broth:
5. Make the Broth: Take a bit of the oil used for cooking the chicken topping and add it to a pot of water. Bring to a boil and add a small amount of chicken bouillon (Royco). This will create a light broth to serve with the noodles.

Serve:
6. Assemble the Dish: Place a portion of the cooked noodles into each serving bowl. Top with the chicken mixture. Ladle the hot broth over the noodles and garnish with additional sliced green onions if desired.

Note: I opted not to use additional condiments like chili sauce or extra sweet soy sauce, as the flavors are well-balanced within the chicken topping. Enjoy your meal! 🍲
