Indonesian Mixed Chicken Soup Delight

Sup Ayam Campur

Ingredients:

  • 1 chicken breast, diced
  • 2 chicken wings, cut into 4 pieces
  • 4 cups of water
  • 1 potato, peeled and diced
  • 5 green beans, trimmed and cut lengthwise
  • 2 carrots, peeled and sliced into rounds
  • 1/2 cup shredded cabbage
  • 5 beef meatballs
  • 6 quail eggs
  • 2 stalks of celery
  • 3 tablespoons cooking oil
  • 5 shallots
  • 4 cloves garlic
  • 2 candlenuts, toasted until golden
  • 2 inches of turmeric, roasted and crushed
  • 2 teaspoons white pepper powder
  • 2 cups of water
  • 1 teaspoon oyster sauce
  • 1 1/2 teaspoons salt
  • 1 teaspoon MSG-free chicken bouillon
  • 1 teaspoon butter or margarine

Instructions:

  1. Prepare the Broth:

    • In a large pot, bring 4 cups of water to a boil. Once boiling, add the cleaned and cut chicken wings along with the celery stalks.
    • Continue to boil until fragrant, and the liquid reduces to about 3 cups. Make sure the water is boiling before adding the chicken pieces.
  2. Make the Spice Paste:

    • While the broth is cooking, blend the shallots, garlic, and toasted candlenuts into a fine paste.
    • Heat the cooking oil in a pan over medium heat. Add the spice paste along with the white pepper and roasted turmeric. Sauté until the mixture is fragrant and fully cooked.
  3. Combine Ingredients:

    • Add the sautéed spice paste into the boiling broth. Pour in an additional 2 cups of water, then add the oyster sauce and salt. Bring the mixture back to a boil.
    • Once boiling, add the diced chicken breast, quail eggs, and beef meatballs. Cook until the chicken breast is fully cooked.
  4. Add Vegetables:

    • When the chicken breast is done, add the sliced carrots and diced potatoes to the pot. Cook until they are half-tender.
    • Next, add the green beans. Once they begin to soften, add the shredded cabbage. Cook until all the vegetables are tender.
  5. Finish and Serve:

    • Stir in the butter or margarine until melted, then add the MSG-free chicken bouillon. Mix well and adjust the seasoning to taste.
    • Turn off the heat and serve the soup hot, garnished with chopped celery leaves.
