Indonesian Nasi Kebuli with Spiced Beef Ribs

Nasi Kebuli (Beef Ribs)

Ingredients

  • 500 grams of beef ribs (can be substituted with lamb)
  • 4 cups of rice
  • 12 shallots, finely chopped
  • 7 cloves of garlic, finely chopped
  • 1 onion, finely chopped
  • 3 cardamom pods
  • 1 cinnamon stick
  • 3 star anise
  • 3 cloves
  • 5 tablespoons coconut milk or liquid milk
  • 2 teaspoons tomato sauce
  • 1 tablespoon curry powder (available in supermarkets)
  • Salt and sugar to taste
  • Oil for sautéing

Spice Paste:

  • 1 teaspoon coriander seeds
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon fennel seeds
  • 7 red curly chilies
  • 1/2 nutmeg

Accompaniments:

  • Tomatoes
  • Cucumbers
  • Crackers or emping (melinjo crackers)
  • Pickles

Instructions

  1. Prepare the Beef Ribs: Rinse the beef ribs thoroughly and cut them into smaller pieces as needed.

  2. Make the Spice Paste: Grind together the coriander seeds, black pepper, fennel seeds, red curly chilies, and nutmeg to make a fine paste.

  3. Sauté the Spices: Heat some oil in a large pot over medium heat. Add the chopped shallots, garlic, and onion. Sauté until fragrant and golden brown. Add the cardamom pods, cinnamon stick, star anise, and cloves. Continue to sauté for another few minutes until the spices release their aroma.

  4. Cook the Beef Ribs: Add the beef ribs to the pot and sauté until they change color. Pour in enough water to cover the beef ribs generously, as this will also be used to cook the rice. Add the coconut milk or liquid milk, curry powder, tomato sauce, salt, and sugar to taste. Stir well to combine. Cover and simmer until the beef ribs are tender and the flavors have melded together, about 1-2 hours.

  5. Prepare the Rice: Remove the beef ribs from the pot and set them aside. Taste the broth and adjust the seasoning if necessary. Add the rice to the broth, ensuring it is fully submerged. Cook the rice until the liquid is absorbed, about 15-20 minutes.

  6. Steam the Rice: Once the liquid is absorbed, transfer the rice to a steamer. Steam until the rice is fully cooked and fluffy, about 30 minutes.

  7. Fry the Beef Ribs: Before serving, fry the beef ribs in a little oil until they are crispy on the outside.

  8. Serve: Arrange the rice on a serving platter, top with the fried beef ribs, and garnish with the accompaniments of your choice, such as sliced tomatoes, cucumbers, crackers or emping, and pickles.
