Ingredients:

  • Rice Cakes (Lontong): 5 pieces, pre-cooked
  • Chicken Breast: 1/4 kg
  • Red Crackers: For garnish
  • For the Spice Paste:
    • 5 shallots
    • 4 garlic cloves
    • Black pepper to taste
    • 3 candlenuts
    • 1 cm turmeric
    • 1 cm ginger
    • Large red chili (adjust to taste)
    • Curly red chilies (adjust to taste)
    • Salt and sugar to taste
    • Chicken flavor enhancer (optional, small amount)
  • Coconut Milk: 1 can (Kara brand)
  • Cooking Oil: For sautéing
  • Fried Shallots: For garnish
  • Bay Leaves: A few
  • Lemongrass Stalks: 2, bruised

For the Sambal (Chili Sauce):

  • Large Red Chili Peppers: 2-3
  • Curly Red Chilies: 2-3
  • Garlic: To taste
  • Salt: To taste

Instructions:

  1. Prepare the Chicken:

    • Boil the chicken breast until tender. Once cooked, drain and set aside.
    • Heat oil in a pan and fry the chicken until golden. After frying, shred the chicken into bite-sized pieces.
  2. Make the Spice Paste:

    • Blend the shallots, garlic, black pepper, candlenuts, turmeric, ginger, red chilies, and curly red chilies into a smooth paste.
    • Heat a small amount of oil in a pan over medium heat. Sauté the spice paste until fragrant and the oil begins to separate.
  3. Cook the Curry Base:

    • Add bay leaves and bruised lemongrass stalks to the sautéed spice paste. Continue to cook until aromatic.
    • Season with salt and sugar to taste. Stir in the chicken broth from boiling the chicken.
    • Bring the mixture to a boil. Lower the heat and add the coconut milk. Simmer until the sauce thickens and the flavors meld together. Adjust seasoning with a chicken flavor enhancer if desired.
  4. Prepare the Sambal:

    • Roast or boil the red chilies and curly red chilies until soft. Blend with garlic and salt until smooth.
    • Adjust seasoning according to taste.
  5. Assemble and Serve:

    • Cut the pre-cooked rice cakes (lontong) into small pieces.
    • Place the rice cake pieces in bowls. Ladle the hot coconut curry sauce over the lontong.
    • Garnish with fried shallots, red crackers, and shredded chicken.
    • Serve with sambal on the side for added spice.
