Here’s how you can make this traditional Indonesian recipe at home.

Ingredients:

  • 300 grams tuna fish (you can use other types of fish if preferred)
  • 5 stalks of basil (use only the leaves)
  • 1/2 lime (for juice)
  • 2 cloves garlic
  • 3 shallots
  • 5 red chilies
  • 2 bird’s eye chilies (adjust to taste)
  • 1/2 teaspoon coriander seeds
  • 1/2 teaspoon black pepper
  • 1 candlenut
  • 1 bay leaf
  • 2 kaffir lime leaves
  • 1 stalk lemongrass (crushed)
  • 1 cm ginger
  • 2 cm turmeric
  • 1 cm kencur (aromatic root)
  • 2 cm galangal (crushed)
  • Salt to taste
  • Banana leaves (for wrapping)

Instructions:

  1. Prepare the Fish:

    • Clean and cut the tuna into pieces. Rinse thoroughly.
    • Rub the fish with lime juice and a pinch of salt to remove any fishy odor. Set aside.
  2. Prepare the Spice Paste:

    • In a blender or food processor, combine the garlic, shallots, red chilies, bird’s eye chilies, coriander seeds, black pepper, and candlenut. Blend into a smooth paste.
    • Add the ginger, turmeric, kencur, and galangal to the paste and blend again until well mixed.
  3. Marinate the Fish:

    • Rub the spice paste all over the tuna pieces, ensuring that each piece is well-coated.
    • Let the marinated fish sit for about 5 minutes to absorb the flavors.
  4. Wrap the Fish:

    • Cut the banana leaves into squares large enough to wrap each piece of fish.
    • Place a few basil leaves on each piece of fish, then wrap it securely with the banana leaves. Secure the ends by folding and pinning them with toothpicks or by tying them with kitchen twine.
  5. Steam the Fish:

    • Arrange the wrapped fish in a steamer basket.
    • Steam over boiling water for about 30 minutes, or until the fish is cooked through and tender.
  6. Serve:

    • Carefully unwrap the fish and place it on a serving platter.
    • Serve warm and enjoy the rich, aromatic flavors of this traditional dish.

Pepes Ikan Tuna Bumbu Orange is a wonderful dish that brings a taste of Indonesian cuisine to your table. The use of fresh herbs and spices, along with the steaming method, ensures a flavorful and healthy meal that’s sure to impress.
