Indonesian Oxtail Soup with Spicy Nutmeg Seasoning

Simple Indonesian Oxtail Soup Recipe from the MCH Family

Ingredients:

  • 2 kg oxtail or beef ribs
  • 4 packs of Royco beef seasoning
  • 1 pack of Ladaku seasoning
  • ½ nutmeg (pala)
  • Fresh celery and green onions, to taste
  • 2 tomatoes
  • 6 cloves of garlic
  • 10 cloves of shallots
  • Water, as needed for boiling
  • 2 tablespoons cooking oil

Instructions:

  1. Prepare the Oxtail: Rinse the oxtail pieces thoroughly under cold water. Set aside.

  2. Sauté the Aromatics: Heat the cooking oil in a pan over medium heat. Add the shallots and garlic, frying until they begin to soften and become slightly translucent.

  3. Grind the Spices: Using a mortar and pestle, grind the nutmeg, shallots, garlic, and Ladaku seasoning together until you achieve a fine paste.

  4. Cook the Oxtail: Transfer the spice paste into a pressure cooker. Add the oxtail pieces and pour in enough water to cover the meat. Stir in the Royco beef seasoning. Secure the lid on the pressure cooker and cook for 60 minutes.

  5. Add Vegetables: After the cooking time, carefully release the pressure from the cooker. Open the lid and add the chopped tomatoes, celery, and green onions to the pot. Stir to combine.

  6. Serve: Once the vegetables have cooked to your desired tenderness, the soup is ready to be served. Enjoy this hearty oxtail soup with a side of sambal goang for a complete meal.
