Indonesian Patin Fish Curry with Thai Basil

Gulai Ikan Patin Recipe

Ingredients:

  • 2 Patin fish (cut into desired pieces)
  • 1 block tofu
  • 10 shallots
  • 5 garlic cloves
  • 2 cm (about 1 inch) of kencur (aromatic ginger)
  • 12 bird’s eye chilies (adjust to taste)
  • 1 packet of coconut milk (Santan Kara)
  • Seasoning (such as MSG or a preferred flavor enhancer)
  • Salt to taste
  • A handful of Thai basil leaves (Daun Kemangi)

Instructions:

  1. Prepare the Fish and Tofu:

    • Clean the Patin fish thoroughly and cut it into pieces according to your preference.
    • Fry the tofu and fish pieces until they are half-cooked, then set aside.
  2. Make the Spice Paste:

    • Blend together the shallots, garlic, kencur, and bird’s eye chilies into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a bit of oil in a pan and sauté the spice paste until it becomes fragrant and aromatic.
  4. Combine Ingredients:

    • Add the half-cooked Patin fish and tofu to the pan with the sautéed spice paste.
    • Allow it to cook until it starts to simmer.
  5. Add Coconut Milk:

    • Pour in the coconut milk and season with salt and seasoning (MSG or your preferred flavor enhancer).
    • Adjust the seasoning to taste and let it simmer until the flavors meld together.
  6. Add Thai Basil:

    • Add the washed Thai basil leaves to the pan.
    • Continue cooking until the dish reaches a boil.
  7. Serve:

    • Your Gulai Ikan Patin is now ready to be served. Enjoy this flavorful dish with steamed rice or as part of a larger meal.
