Instructions:

Steps Details
Step 1: Prepare the fish. Lay the mackerel fish neatly on a non-stick Teflon pan, ensuring they are spaced evenly.
Step 2: Make the spice paste (bumbu halus). Blend the red chilies, shallots, garlic, candlenut, ginger, galangal, and turmeric in a food processor until smooth. You can add a little water if necessary to help blend the ingredients together.
Step 3: Pour the spice paste over the fish, spreading it evenly. Add the lemongrass and tamarind pieces to the mix. Do not blend the tamarind with the paste—leave it whole for a burst of flavor during cooking.
Step 4: Season with salt and sugar to taste, making sure the seasoning is evenly distributed.
Step 5: Cover the pan and cook the fish over low heat. Occasionally, flip the fish to ensure even cooking. Continue cooking until the fish is nearly done.
Step 6: Just before the fish is fully cooked, add the chopped tomato. Cover the pan again and let it cook until the fish is fully cooked through and the tomatoes are softened.
Step 7: Once the fish is cooked, carefully transfer it to a serving plate, and it’s ready to be served!
