Ingredients:
- 2 blocks of firm tofu (tahu cina/tahu putih)
- A handful of fresh basil leaves (kemangi)
- 1 packet of chicken stock seasoning (masako ayam)
- Salt to taste
- 1-2 bay leaves (daun salam)
- Banana leaves (daun pisang) for wrapping
For the Spice Paste:
- 10 red chilies (cabe merah kriting) + small chilies (cabe rawit)
- 5 shallots (bawang merah)
- 2 cloves of garlic (bawang putih)
- 1 teaspoon of sugar

Prepare the Banana Leaves: Cut and clean the banana leaves. This will be used to wrap the tofu mixture.

Mash the Tofu: Use a spoon or fork to mash the tofu until it is broken into small, fine pieces.

Cook the Spice Paste: In a pan, heat a little oil and sauté the spice paste ingredients (red chilies, small chilies, shallots, and garlic) until fragrant.

Combine Ingredients: In a large bowl, mix the sautéed spice paste with the mashed tofu, fresh basil leaves, chicken stock seasoning, a pinch of salt, and sugar. Stir well to ensure that all ingredients are thoroughly combined.

Season to Taste: Taste the mixture and adjust the seasoning with additional salt or sugar if needed.

Wrap the Mixture: Take a piece of banana leaf, place a bay leaf on it, and add about 2 tablespoons of the tofu mixture on top. Fold the banana leaf over the filling to create a neat packet, securing the ends with toothpicks.

Steam: Place the wrapped packets in a steamer and steam for approximately 30 minutes until the tofu is fully cooked and the flavors are melded together.
