Pindang Bandeng: Indonesian Braised Milkfish Delight

Ingredients

  • 3 medium-sized milkfish (bandeng), cleaned and cut into thirds or halves as per preference
  • 1 thumb-sized piece of turmeric, thinly sliced
  • 1 thumb-sized piece of ginger, thinly sliced
  • 1 thumb-sized piece of galangal, thinly sliced
  • 10 shallots, thinly sliced
  • 7 cloves of garlic, thinly sliced
  • 3 medium tomatoes, diced into large pieces
  • Bird’s eye chilies (cabe rawit) to taste
  • 1 packet of tamarind paste (asem jawa)
  • 5 bay leaves (daun salam)
  • 2 stalks of lemongrass (daun sereh), bruised
  • Salt to taste
  • Seasoning powder to taste (optional)
  • Ground white pepper to taste
  • Sweet soy sauce (kecap manis) to taste
  • Water as needed
  • Cooking oil for sautéing

Instructions

  1. Prepare the Fish:

    • Thoroughly clean the milkfish and cut them into thirds or halves based on your preference. Set aside.
  2. Sauté the Aromatics:

    • Heat a generous amount of cooking oil in a large pan over medium heat.
    • Add the sliced turmeric, ginger, galangal, shallots, and garlic. Sauté these aromatics together until they release their fragrance and begin to soften.
