Opor Ayam Tahu Presto

Opor Ayam Tahu Presto is a delightful Indonesian dish, perfect for a comforting meal. This recipe combines tender chicken and tofu in a rich, aromatic coconut sauce. Here’s how you can make this savory dish:

Ingredients:

  • 7 pieces chicken thighs
  • 5 pieces tofu, cut into triangles
  • 1 finger-length piece of galangal, crushed
  • 6 kaffir lime leaves, torn
  • 1 red chili, sliced into rounds
  • 2 stalks scallions

Spice Paste:

  • 6 shallots
  • 5 garlic cloves
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon ground coriander
  • 1 Knorr seasoning block
  • 1 pack (200 ml) instant coconut milk
  • 1 finger-length piece of ginger
  • 1 finger-length piece of turmeric
  • 4 candlenuts
  • Salt and sugar to taste
  • Water as needed
  • Oil for sautéing

Instructions:

  1. Prepare the Chicken and Tofu:

    • Wash the chicken thighs thoroughly and then fry them until they are half cooked. Remove from oil and set aside.
    • Cut the tofu into triangle shapes and fry until they are also half cooked. Set aside with the chicken.
  2. Make the Spice Paste:

    • In a blender, combine the shallots, garlic, ground pepper, ground coriander, ginger, turmeric, and candlenuts. Blend until you achieve a smooth paste.
  3. Cook the Spice Paste:

    • Heat some oil in a pan over medium heat. Add the spice paste and sauté until fragrant and cooked through.
  4. Combine Ingredients:

    • Add water to the pan and stir well. Then, add the chicken and tofu pieces. Mix thoroughly and let it cook for a few minutes.
  5. Presto Cooking:

    • Transfer the mixture to a pressure cooker. Cook under high pressure for 20 minutes.
  6. Finish the Dish:

    • After cooking, release the pressure and add the instant coconut milk to the pot. Stir and bring to a boil. Adjust seasoning with salt and sugar according to your taste.
  7. Garnish and Serve:

    • Add the crushed galangal, torn kaffir lime leaves, sliced red chili, and chopped scallions to the pot. Allow the dish to simmer briefly to let the flavors meld.
    • Serve the opor ayam tahu presto hot with lontong (compressed rice cakes) or steamed rice.
