Indonesian Puffy Omelette with Spicy Chili Paste

Telur Dadar Gembung (Indonesian Puffy Omelette)

Ingredients:

  • 6 large eggs
  • 2 stalks green onions, sliced thinly
  • 6 tablespoons rice flour
  • Spice Paste:
    • 10 red chilies
    • 20 bird’s eye chilies
    • 2 cm turmeric
    • 6 shallots
    • 2 garlic cloves
    • 1 tablespoon coriander seeds
    • Salt, to taste
  • 1 liter cooking oil (for frying)

Instructions:

  1. Prepare the Egg Mixture:

    • Crack the eggs into a mixing bowl. Add salt, the prepared spice paste, sliced green onions, and rice flour. Mix thoroughly until the mixture is smooth and free of lumps.
  2. Heat the Oil:

    • Heat the cooking oil in a deep frying pan or wok over medium heat until it is very hot. Ensure the oil is sufficiently hot before proceeding.
  3. Cook the Omelette:

    • Pour the egg mixture into the hot oil. Reduce the heat to low immediately after adding the mixture. Cook the omelette slowly to ensure it cooks evenly and puffs up nicely.
  4. Fry and Flip:

    • Allow the omelette to cook until the edges start to turn golden brown. Carefully flip the omelette over and cook the other side until it is also golden and fully cooked through. Use a skewer or fork to check the center and ensure it is cooked.
  5. Serve:

    • Once the omelette is cooked, remove it from the oil and place it on a paper towel-lined plate to drain excess oil. Slice and serve hot.
