Rawon Sapi: A Rich and Flavorful Indonesian Beef Soup

Ingredients:

  • 250 grams beef (sliced)
  • 1 segment galangal (crushed)
  • 3 bay leaves
  • 1 stalk lemongrass (crushed and tied)
  • Seasoning (beef flavor, such as Royco)
  • Sugar
  • Salt
  • Sufficient water for boiling the beef
  • Ground Spice Paste:
    • 5 shallots
    • 3 cloves garlic
    • 2 candlenuts
    • 2 segments ginger
    • 1.5 segments turmeric
    • 1 kluwak (Pangium edule, also known as kluwek or keluak)
  • For Garnish:
    • Spring onions
    • Tomato
    • Bean sprouts
    • Fried onions
    • Chili sauce
    • Crackers

Instructions:

  1. Prepare the Beef:

    • Thoroughly clean the beef and boil it for about 10 minutes. Discard the water, then reboil the beef for approximately 15 minutes or until tender. For extra tenderness, you may add a pinch of baking soda to the first boiling water. Once the beef is tender, cut it into bite-sized pieces and return it to the pot.
  2. Cook the Spice Paste:

    • In a pan, heat a little oil and sauté the ground spice paste until it becomes aromatic. Add the crushed galangal, bay leaves, and lemongrass. Pour in a small amount of the beef broth to prevent the spices from burning, and then add this mixture to the pot with the beef.
  3. Season the Soup:

    • Add the seasoning (such as Royco beef), sugar, salt, and additional spices as needed. Taste and adjust the seasoning if necessary.
  4. Garnish and Serve:

    • Serve the Rawon Sapi hot, garnished with sliced spring onions, tomato wedges, bean sprouts, and a sprinkle of fried onions. Accompany with chili sauce and crackers on the side for added texture and flavor.
