Semur Ayam and Tempe: A Delicious Indonesian Classic

Ingredients:

  • 1/2 chicken, cut into pieces
  • 1 small package tempe, sliced
  • For the spice paste:
    • 4 shallots
    • 3 garlic cloves
    • 2 pieces of ginger
    • 2 pieces of galangal

  • Water, as needed
  • 1 small tomato
  • 3 red chilies
  • 1 stalk celery, thinly sliced

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken pieces thoroughly. Rub the chicken with 1 teaspoon of salt and the juice of 1 lemon. Allow it to marinate for 15 minutes.
  2. Make the Spice Paste:

    • In a blender or food processor, combine the shallots, garlic cloves, ginger, galangal, and candlenuts. Blend into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a generous amount of cooking oil in a large pan over medium heat. Add the spice paste and sauté until fragrant and golden brown.
  4. Add Aromatics:

    • Add the bay leaf, kaffir lime leaf, and lemongrass to the pan. Stir to combine and let the flavors meld.
  5. Cook the Chicken:

    • Add the marinated chicken pieces to the pan with the spice paste. Stir to coat the chicken evenly with the spices. Sauté until the chicken is browned and the spices are well absorbed.
  6. Add Liquid and Vegetables:

    • Allow the mixture to come to a boil, then reduce the heat to low. Let it simmer, uncovered, until the sauce thickens and the flavors are well combined. This should take about 30-45 minutes. Stir occasionally and adjust seasoning as needed.
  8. Finish and Serve:

    • Once the sauce has reduced and the chicken is tender, sprinkle with thinly sliced celery. Give it a final stir.
