  • 2 bay leaves (daun salam)
  • 2 kaffir lime leaves (daun jeruk)
  • A pinch of sugar (gula pasir)
  • 3 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon tomato sauce (saus tomat)
  • 1/4 cup water (optional, adjust as needed)

Instructions:

  1. Prepare the Chicken: Begin by boiling the chicken breast fillet until it is thoroughly cooked. Once done, remove it from the pot and let it cool slightly. Shred the chicken into fine strips and set aside.

  2. Create the Spice Paste: In a mortar and pestle or a food processor, grind the shallots, garlic cloves, and candlenut into a smooth paste. Add the salt and sugar to the mixture.

  3. Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the ground spice paste to the pan and sauté until it becomes fragrant and golden brown. Add the bay leaves and kaffir lime leaves to the pan, stirring well.
