  • 3 eggs (for filling)
  • 1 tablespoon vegetable oil
  • Additional vegetable oil for cooking

Instructions

  1. Prepare the Mixture:

    • In a large mixing bowl, combine the ground snakehead fish with 500 ml of water. Stir well until the mixture is smooth and fully combined.
    • Gradually add the fine salt, granulated sugar, and flavor enhancer (if using). Mix thoroughly to ensure the ingredients are well incorporated.
    • Finally, add the sago flour to the mixture. Use a wooden spoon to mix until the dough is even and the sago flour is fully absorbed.
  2. Prepare the Cooking Water:

    • In a large pot, bring water to a boil. Add 1 tablespoon of vegetable oil to the boiling water. This will help prevent the empek-empek from sticking together during cooking.
  3. Prepare the Filling:

    • In a separate bowl, beat the eggs with 1/2 teaspoon of salt. Add 2 tablespoons of water to the beaten eggs and mix well.
  4. Shape the Empek-empek:

    • Take a portion of the dough and form it into a ball. Create a small hole in the center of each ball and fill it with a small amount of the beaten egg mixture. Carefully seal the dough around the filling to enclose it completely.
  5. Cook the Empek-empek:

    • Gently place the prepared empek-empek into the boiling water. Cook until the empek-empek float to the surface, indicating they are fully cooked. This should take about 10-15 minutes.
