Soto Ayam Recipe: A Delicious Indonesian Chicken Soup

Ingredients:

For the Chicken:

  • 500 grams chicken (ayam)
  • 4 cloves garlic (bawang putih)
  • 1 teaspoon turmeric (kunyit)
  • Salt to taste (secukupnya)

For the Soup Base:

  • 2 shallots (bawang merah)
  • 5 cloves garlic (bawang putih)
  • 1 teaspoon ground turmeric (kunyit, if only powder is available)
  • 1 cm piece of ginger (jahe)
  • 2 candlenuts (kemiri)
  • 2 kaffir lime leaves (daun jeruk)
  • 2 bay leaves (daun salam)
  • 1 stalk lemongrass (sereh)
  • Chicken stock (kaldu ayam)
  • Salt to taste (garam)

For Serving:

  • Rice vermicelli (bihun)
  • Bean sprouts (tauge)
  • Hard-boiled eggs (telur)
  • Fried shallots (bawang goreng)
  • Tomato (tomat)
  • Cabbage (kol)

Instructions:

  1. Prepare the Chicken:

    • Begin by blending the garlic and turmeric with a bit of water to create a smooth paste. Add salt to taste.
    • Rub this paste all over the chicken pieces. Cover and refrigerate for approximately 30 minutes to allow the flavors to infuse.
  2. Cook the Chicken:

    • After marinating, steam the chicken until cooked through, then fry until golden and crispy. Set aside.
  3. Prepare the Soup Base:

    • Boil water in a pot to serve as the base for the soup.
    • Heat a pan and sauté the blended shallots, garlic, turmeric, ginger, and candlenuts until they turn golden brown and fragrant.
    • Add the kaffir lime leaves and smashed lemongrass to the pan, stirring for a few more minutes.
    • Transfer this sautéed mixture to the boiling water and stir well.
  4. Flavor the Soup:

    • Add chicken stock (you can use a cube or powder like Maggi) to the soup, and adjust salt to taste. Allow it to simmer for a few minutes to meld the flavors.
  5. Assemble the Dish:

    • In serving bowls, place a portion of cooked rice vermicelli, bean sprouts, shredded chicken, and sliced tomato.
    • Pour the hot soup over the ingredients in each bowl.
    • Garnish with fried shallots and serve with hard-boiled eggs and shredded cabbage on the side.
