Soto Ayam Lamongan: A Flavorful Indonesian Chicken Soup
Ingredients:
For the Chicken:
- 1/2 chicken, thoroughly cleaned (add lemon juice and salt for cleaning)
For the Spice Paste:
- 3 shallots
- 3 cloves of garlic
- 2 candlenuts, toasted
- A small piece of ginger
- A small piece of turmeric
- Ground white pepper, to taste
- Salt, to taste
- Granulated sugar, to taste
- 1 piece of galangal, lightly bruised
- 1 stalk of lemongrass, lightly bruised
- 2 bay leaves
- 2 kaffir lime leaves
- Lemon juice, to taste
- Cooking oil, for sautéing
For the Soup Complements:
- Glass noodles (soaked in hot water)
- Finely shredded cabbage (soaked in hot water)
- Bean sprouts (optional, soaked in hot water)
- Boiled potatoes, diced
- Boiled eggs, halved
- Fried shallots (for garnish)
- Sliced scallions (for garnish)
- Sweet soy sauce (for serving)
Instructions:
Preparing the Chicken:
- Clean the Chicken: Thoroughly clean the chicken by rinsing it with water. Add lemon juice and salt during the cleaning process to remove any unwanted odor and ensure the chicken is fresh.
- Boil the Chicken: Place the cleaned chicken in a pot of boiling water and cook until the chicken is fully cooked. Remove the chicken from the broth and set it aside.
Making the Spice Paste:
- Blend the Spices: In a blender or food processor, combine the shallots, garlic, toasted candlenuts, ginger, turmeric, ground white pepper, salt, and granulated sugar. Blend until you get a smooth paste.
- Sauté the Spice Paste: Heat a small amount of cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant. Add the bruised galangal, lemongrass, bay leaves, and kaffir lime leaves. Continue to sauté for a few more minutes to release the aroma of the spices.

- Fry the Chicken: While the broth is simmering, heat oil in a separate pan and fry the cooked chicken until it is golden brown and crispy. Let it cool slightly, then shred the chicken into bite-sized pieces.
Assembling the Soto Ayam:
- Prepare the Complements: Soak the glass noodles, shredded cabbage, and bean sprouts (if using) in hot water until softened. Drain and set aside.
- Assemble the Soup: In serving bowls, arrange the diced boiled potatoes, soaked glass noodles, shredded cabbage, halved boiled eggs, and shredded fried chicken.
- Add the Broth: Pour the hot chicken broth over the arranged ingredients in each bowl.
- Garnish and Serve: Top each bowl with fried shallots and sliced scallions. Serve the Soto Ayam Lamongan with sweet soy sauce on the side for added flavor.
