Soto Ayam Lamongan: A Flavorful Indonesian Chicken Soup

Ingredients:

For the Chicken:

  • 1/2 chicken, thoroughly cleaned (add lemon juice and salt for cleaning)

For the Spice Paste:

  • 3 shallots
  • 3 cloves of garlic
  • 2 candlenuts, toasted
  • A small piece of ginger
  • A small piece of turmeric
  • Ground white pepper, to taste
  • Salt, to taste
  • Granulated sugar, to taste
  • 1 piece of galangal, lightly bruised
  • 1 stalk of lemongrass, lightly bruised
  • 2 bay leaves
  • 2 kaffir lime leaves
  • Lemon juice, to taste
  • Cooking oil, for sautéing

For the Soup Complements:

  • Glass noodles (soaked in hot water)
  • Finely shredded cabbage (soaked in hot water)
  • Bean sprouts (optional, soaked in hot water)
  • Boiled potatoes, diced
  • Boiled eggs, halved
  • Fried shallots (for garnish)
  • Sliced scallions (for garnish)
  • Sweet soy sauce (for serving)

Instructions:

Preparing the Chicken:

  1. Clean the Chicken: Thoroughly clean the chicken by rinsing it with water. Add lemon juice and salt during the cleaning process to remove any unwanted odor and ensure the chicken is fresh.
  2. Boil the Chicken: Place the cleaned chicken in a pot of boiling water and cook until the chicken is fully cooked. Remove the chicken from the broth and set it aside.

Making the Spice Paste:

  1. Blend the Spices: In a blender or food processor, combine the shallots, garlic, toasted candlenuts, ginger, turmeric, ground white pepper, salt, and granulated sugar. Blend until you get a smooth paste.
  2. Sauté the Spice Paste: Heat a small amount of cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant. Add the bruised galangal, lemongrass, bay leaves, and kaffir lime leaves. Continue to sauté for a few more minutes to release the aroma of the spices.

Combining the Ingredients:

  1. Mix the Spices with the Broth: Add the sautéed spice paste to the pot of chicken broth. Stir well and bring it to a boil. Add salt, sugar, ground white pepper, and lemon juice to taste. Let the broth simmer to allow the flavors to meld together.
  2. Fry the Chicken: While the broth is simmering, heat oil in a separate pan and fry the cooked chicken until it is golden brown and crispy. Let it cool slightly, then shred the chicken into bite-sized pieces.

Assembling the Soto Ayam:

  1. Prepare the Complements: Soak the glass noodles, shredded cabbage, and bean sprouts (if using) in hot water until softened. Drain and set aside.
  2. Assemble the Soup: In serving bowls, arrange the diced boiled potatoes, soaked glass noodles, shredded cabbage, halved boiled eggs, and shredded fried chicken.
  3. Add the Broth: Pour the hot chicken broth over the arranged ingredients in each bowl.
  4. Garnish and Serve: Top each bowl with fried shallots and sliced scallions. Serve the Soto Ayam Lamongan with sweet soy sauce on the side for added flavor.

Tips:

  • Adjust the Seasoning: Feel free to adjust the seasoning to your taste. You can add more or less salt, sugar, and lemon juice as desired.
  • Customize Your Soup: Soto Ayam is a versatile dish. You can add other ingredients like tomatoes or sliced chilies to customize it to your liking.
  • Serve with Condiments: Traditionally, Soto Ayam is served with a side of sambal (chili paste) and lime wedges for an extra kick of flavor.

Enjoy your Soto Ayam Lamongan, a hearty and aromatic Indonesian chicken soup that’s perfect for any occasion!
