Soto Bandung / Soto Daging Sapi & Lobak Recipe
Ingredients:
- 250 grams beef (diced)
- 1 liter water (for boiling)
- 2 bay leaves
- 1 stalk lemongrass, bruised
- 2 cm ginger, bruised
- 2 cm galangal, bruised
- 1 stalk celery, sliced
- 1 stalk green onion, sliced
- 1 teaspoon sweet soy sauce (kecap manis)
- 2 radishes, peeled and cut into chunks
- Cooking oil (for sautรฉing)
- 4 kaffir lime leaves
- Salt, sugar, and pepper to taste
For the Spice Paste:
- 2 cloves garlic
- 4 shallots
For Serving:
- Fried soybeans (kacang kedelai goreng)
- Fried shallots (bawang merah goreng)
- Chili sambal
- Crackers (kerupuk)
- Vinegar or lime juice

Prepare the Beef:
- In a large pot, bring 1 liter of water to a boil. Add the beef and cook until tender. Once the beef is tender, remove it from the pot and cut it into small cubes. Strain the cooking liquid and set it aside.

Make the Spice Paste:
- In a blender or food processor, combine the garlic and shallots. Blend until smooth to create the spice paste.

Sautรฉ the Spice Paste:
- Heat a bit of cooking oil in a pan over medium heat. Add the spice paste and sautรฉ until fragrant.

Combine Ingredients:
- Transfer the sautรฉed spice paste into the pot with the reserved beef broth. Add the diced beef back into the pot. Stir in the bay leaves, lemongrass, ginger, galangal, and kaffir lime leaves.

Cook the Soup:
- Bring the mixture to a boil and then reduce the heat to simmer. Add the radish chunks and season with salt, sugar, and pepper. Stir in the sweet soy sauce. Let the soup simmer until the radishes are tender.

Finish the Soup:
- Just before serving, add the sliced celery and green onions. Turn off the heat and let the flavors meld.

Serve:
- Ladle the Soto Bandung into bowls and serve with fried soybeans, fried shallots, chili sambal, crackers, and a splash of vinegar or lime juice to taste.
