Nasi Kebuli Sapi Goreng: A Flavorful Indonesian Delight

Ingredients:

  • 2 cups rice
  • 3 ounces beef (cubed)
  • 3 tablespoons Kara coconut milk
  • 1 star anise
  • 2 cardamom pods
  • 1 dried clove
  • 3 cm cinnamon stick
  • 1 tablespoon chili sauce or tomato sauce
  • 1 tablespoon curry powder
  • Ground spice mix:
    • 5 curly red chilies
    • 1/2 teaspoon cumin (or fennel seeds)
    • 1/2 teaspoon black pepper (ground)
    • 1/2 teaspoon coriander
    • 1/4 teaspoon nutmeg
  • Sliced spices:
    • 1/2 onion
    • 7 shallots
    • 4 garlic cloves
  • Salt/masako beef seasoning
  • Sugar
  • Water
  • Cooking oil for sautéing

Steps:

  1. Prepare the Spices:

    • Slice the onion, shallots, and garlic into thin pieces.
    • Blend the curly red chilies, cumin (or fennel seeds), black pepper, coriander, and nutmeg into a fine paste.
  2. Cook the Beef:

    • Rinse the beef cubes and set them aside.
    • In a large pan or wok, heat some cooking oil over medium heat.
    • Sauté the sliced onion, shallots, and garlic until fragrant and golden brown.
    • Add the ground spice paste and continue to sauté until the mixture becomes aromatic.
  3. Flavor the Beef:

    • Toss in the cardamom pods, star anise, dried clove, and cinnamon stick.
    • Add the beef cubes to the pan and cook until the beef is browned and starting to firm up.
    • Stir in the curry powder, chili sauce (or tomato sauce), and coconut milk.
    • Mix thoroughly, then add enough water to cover the beef. Adjust the amount of water according to your preference for a thicker or thinner sauce. Add salt, masako seasoning, and a pinch of sugar to taste.
    • Let the mixture simmer until the beef becomes tender and the sauce has reduced to your liking.
  4. Prepare the Rice:

    • Wash the rice thoroughly and drain.
    • Once the beef is tender, remove it from the pan and set it aside. Reserve the cooking liquid.
    • Cook the rice using the reserved beef broth. The amount of broth should be adjusted depending on whether you prefer your rice slightly soft or firm.
    • Cook the rice over low heat until the liquid is absorbed. Once done, steam the rice until fully cooked and fluffy.
  5. Fry the Beef:

    • Heat some oil in a separate pan and fry the beef cubes until crispy and golden brown.
  6. Serve:

    • Serve the steamed rice topped with the crispy fried beef.
    • Garnish with your choice of accompaniments such as emping (crackers), fried shallots, or other preferred sides.
