Indonesian Spiced Beef Rib Soup (Sop Iga Sapi)

Title: Hearty Indonesian Beef Rib Soup (Sop Iga Sapi ala Bunda 3D)

Ingredients:

  • 500 grams beef ribs
  • 2 carrots, cut into small pieces
  • 1 tomato, diced
  • 1 stick cinnamon
  • 2 cloves
  • 2 cm ginger, smashed
  • 2 stalks green onions, chopped into 1 cm pieces
  • 1 stalk celery, cut into 2 cm pieces
  • Fried shallots, for garnish
  • 2 liters water, for broth
  • Salt and seasoning, to taste

For the Spice Paste:

  • 6 cloves garlic
  • 1 teaspoon black pepper
  • 1 nutmeg (or 1/2 teaspoon ground nutmeg)

Instructions:

  1. Begin by boiling the beef ribs in water until tender. Once cooked, strain the broth to remove any impurities.

  2. Prepare the spice paste by blending the garlic, black pepper, and nutmeg into a smooth mixture.

  3. In a pan, heat a bit of oil and sauté the spice paste until it becomes fragrant. Add the cinnamon stick, cloves, and smashed ginger. Continue to sauté until the spices release their aromatic flavors.

  4. Transfer the sautéed spice mixture into the beef broth. Bring it to a boil and then reduce the heat to let it simmer gently.

  5. Add the carrots, green onions, and celery into the simmering broth. Allow the soup to cook until the vegetables are tender. Taste and adjust seasoning with salt and additional seasoning as desired.

  6. Serve the soup hot, garnished with diced tomatoes and fried shallots. Enjoy the rich and flavorful beef rib soup with your preferred accompaniments.
