Indonesian Beef Rib Soup (Sop Iga Sapi)

Ingredients:

  • 1/4 kg beef ribs
  • 1 liter water
  • 1 potato, peeled and cubed
  • 4 carrots, peeled and sliced
  • 1 stalk lemongrass, bruised
  • 2 cloves
  • 1 small piece of cinnamon stick
  • 2 kaffir lime leaves
  • 2 cardamom pods
  • Salt, to taste
  • Beef stock powder, to taste
  • For the spice paste (to sauté):
    • 3 cloves garlic
    • 1 small piece of ginger
    • 1 teaspoon black peppercorns

Instructions:

  1. Prepare the Beef Ribs: Begin by boiling the water in a large pot. Once the water reaches a rolling boil, add the beef ribs along with the lemongrass, cloves, cinnamon stick, kaffir lime leaves, and cardamom pods. For a clearer broth, you can pre-cook the beef ribs until they are half done, discard the initial water, and then replace it with fresh water.

  2. Simmer the Broth: Allow the beef ribs to cook until they are tender. This process might take approximately 1 to 1.5 hours, depending on the cut and size of the ribs.

  3. Add Vegetables: Once the beef is tender, add the cubed potato and sliced carrots to the pot. Continue to simmer until the vegetables are cooked through and tender.

  4. Season the Soup: Season with salt and beef stock powder to taste. Adjust the seasoning according to your preference.

  5. Finish with Aromatics: Before serving, add finely chopped green onions to the soup. Turn off the heat and let the residual warmth infuse the flavors.

  6. Serve: Ladle the hot soup into bowls and garnish with sliced tomatoes and fried shallots, if desired. Serve hot for a comforting and flavorful meal.
