For the Fried Beef:
- 4 cloves garlic, sliced
- 1/2 onion, chopped
- 3 red chilies, sliced
- 2 tablespoons sweet soy sauce
- 1 nutmeg, grated
- Black pepper to taste
Instructions:
-
Prepare the Beef:
- Begin by cleaning the beef and cutting it into chunks according to your preference.
- In a large pot, heat a bit of oil and sauté the smashed garlic until fragrant. Add the beef chunks and stir to sear the meat.
- Season the beef with cinnamon stick, cloves, bay leaf, salt, black pepper, and flavor enhancer (if using). Stir well and cook until the meat begins to brown.
- Pour in enough water to cover the beef. Bring to a boil, then reduce the heat and simmer until the beef is tender, about 1 to 1.5 hours.
-
Cook the Vegetables:
- Once the beef is tender, remove the beef chunks and set them aside. Add the sliced carrots and diced potatoes to the pot. Continue cooking until the vegetables are tender.
-
Prepare the Fried Beef:
- In a separate pan, heat some oil and sauté the sliced garlic, chopped onion, and red chilies until fragrant and slightly browned.
- Add the cooked beef chunks to the pan. Stir in the sweet soy sauce, grated nutmeg, and additional black pepper to taste. Cook for a few minutes until the beef is well-coated and caramelized.
-
Combine and Serve:
- Add the sautéed beef mixture back into the pot with the vegetables. Stir in the chopped green onion and celery. Cook for an additional 5 minutes to allow the flavors to meld.
- Adjust seasoning if necessary and serve hot.
