Tongseng Sapi: A Flavorful Indonesian Beef Stew

Ingredients:

  • 300 grams beef, cut into pieces
  • 600 ml water (adjust as needed)
  • 1 ripe tomato, chopped
  • 1 stalk green onion, chopped
  • 4 cabbage leaves, chopped
  • 3 kaffir lime leaves
  • 3 cloves
  • 2 cardamom pods
  • 1 cm galangal, smashed
  • 1 teaspoon sugar
  • 1 teaspoon chicken bouillon powder
  • 1 tablespoon sweet soy sauce (kecap manis)
  • Salt to taste

For the spice paste:

  • 4 cloves garlic
  • 5 shallots
  • 1 teaspoon ground black pepper
  • ½ teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • 4 red curly chilies
  • 3 candlenuts (or 5 for a richer flavor)

Instructions:

  1. Prepare the Spice Paste: Begin by blending the garlic, shallots, black pepper, ground coriander, ground turmeric, red chilies, and candlenuts into a smooth paste. This aromatic base will infuse the dish with rich flavors.

  2. Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant. Incorporate the cloves, cardamom pods, smashed galangal, and kaffir lime leaves. Continue to cook until the spices are well integrated and aromatic.

  3. Add the Beef: Introduce the beef pieces to the pan, stirring well to coat them with the spice paste. Cook until the meat begins to brown.

  4. Simmer: Pour in the water, adjusting the amount as needed to cover the meat. Bring the mixture to a boil, then reduce the heat and simmer until the beef is tender and cooked through.

  5. Season: Add the sugar, chicken bouillon powder, and sweet soy sauce. Adjust the seasoning with salt to taste.
