Indonesian Spiced Beef Tongseng with Coconut Milk

Tongseng Daging Sapi (Indonesian Beef Tongseng)

Ingredients

  • 500 grams beef
  • Coconut milk (can use 1 pack of Kara or 1/2 grated coconut)
  • 12 cloves shallots (6 cloves for fried shallots)
  • 8-10 cloves garlic
  • 1/4 cabbage
  • 2 tomatoes
  • 5 scallions
  • 6 cm turmeric
  • 5 cm ginger
  • 6 cm galangal
  • 3 bay leaves
  • 3 kaffir lime leaves
  • 1 teaspoon candlenuts
  • 1 tablespoon coriander seeds
  • Sweet soy sauce (kecap manis)
  • 2 red chilies
  • 10 bird’s eye chilies (adjust to taste)
  • Salt to taste
  • 1 packet of seasoning powder
  • Ground white pepper

Instructions

  1. Prepare the Beef:

    • Wash the beef thoroughly and cut it into small, bite-sized pieces according to your preference.
    • Place the beef pieces into a pot of boiling water and cook until the meat is tender.
  2. Prepare the Spice Paste:

    • In a mortar and pestle or a food processor, blend the garlic, shallots, turmeric, candlenuts, coriander seeds, and red chilies until smooth.
  3. Sauté the Spice Paste:

    • Heat a little oil in a pan. Sauté the blended spice paste along with bay leaves, kaffir lime leaves, galangal, ginger, whole bird’s eye chilies, and ground white pepper until the mixture becomes fragrant.
  4. Prepare the Vegetables:

    • Slice the tomatoes lengthwise. Cut the cabbage and scallions according to your preference.
  5. Combine Ingredients:

    • Add the sautéed spice mixture into the pot with the tender beef. Stir well to combine.
    • Add the cabbage, scallions, tomatoes, and coconut milk to the pot. Stir until well mixed.
  6. Seasoning:

    • Add salt, sweet soy sauce, and seasoning powder to the pot. Adjust the taste according to your preference.
  7. Final Steps:

    • Allow the mixture to boil and let the flavors meld together. Once the dish has reached your desired taste and consistency, it is ready to be served.
    • Serve the Tongseng Daging Sapi hot, garnished with fried shallots.
