Mie Ayam Solo Recipe
Ingredients:
- 400 grams Egg Noodles (I used egg noodles from 3 chicken eggs, 2 packs)
- 750 grams Chicken Breast
- Cooking Oil
- Salt
- Pepper
Chicken Seasoning (Ground):
- 6 shallots
- 7 cloves garlic
- 1 tsp ground coriander
- 3 candlenuts (roasted without oil)
- 1 tsp ground turmeric
- 1 tbsp sesame oil
Additional Chicken Seasoning:
- 1 thumb-sized piece of ginger
- 2 thumb-sized pieces of galangal
- Lemongrass
- Brown sugar
- Sweet soy sauce (kecap manis)
- 2 bay leaves
- 2 kaffir lime leaves
Accompaniments:
- Meatballs (bakso)
- Wonton crackers (kerupuk pangsit)
- Mustard greens (sawi)
- Spring onions
- Fried shallots
- Sambal (chili paste)
Steps:

Prepare Noodles: Soak the noodles until slightly soft, then steam them (add a bit of oil to prevent sticking) for 20 minutes. While steaming, dice the chicken breast.

Prepare Chicken Seasoning: Blend all ground seasoning ingredients until smooth. Sauté in cooking oil (approximately 150ml) until fragrant.

Add Additional Seasoning: Once fragrant, add the additional chicken seasoning ingredients to the sautéed mixture. Season with salt, pepper, and mix well.

Cook Chicken: Add the diced chicken breast into the sautéed mixture, then pour in water (approximately 300ml). Let it simmer until the chicken is cooked through.

Serve: Once the chicken is cooked and the flavors have melded together, serve the dish hot with the accompaniments.
