  • 3 stalks scallions, chopped coarsely

  • A handful of Thai basil leaves

For the Spice Paste:

  • 10 shallots
  • 4 garlic cloves
  • 5 curly red chilies (optional)
  • 20 bird’s eye chilies (optional)
  • 1/2 thumb-sized piece of ginger
  • 1 thumb-sized piece of turmeric

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken pieces thoroughly. Rub them with salt and lime juice, then set aside to marinate for a few minutes.
  2. Make the Spice Paste:

    • Blend shallots, garlic, ginger, and turmeric into a smooth paste. If using, blend the curly red chilies and bird’s eye chilies as well.
  3. Sauté the Spices:

    • In a large pan, heat a little oil over medium heat. Add the spice paste and sauté until fragrant and the raw aroma of the spices has cooked off.
  4. Add Aromatics:

    • Stir in the smashed lemongrass, kaffir lime leaves, young turmeric leaf, pandan leaf, and scallions. Continue to cook until the ingredients are well combined and aromatic.
  5. Cook the Chicken:

    • Add the marinated chicken pieces to the pan. Cook until the chicken changes color and is well-coated with the spice mixture. Stir occasionally to ensure even cooking.
  6. Incorporate Vegetables:

    • Add the tomato wedges to the pan. Season with salt and sugar according to your taste. Pour in enough water to just cover the chicken.
  7. Simmer:

    • Allow the dish to simmer gently until the chicken is fully cooked and the sauce has reduced to your desired consistency. This usually takes about 20-30 minutes. Stir occasionally and adjust the seasoning as needed.
  8. Add Fresh Herbs:

    • Just before removing the pan from the heat, stir in the Thai basil leaves. Cook for an additional minute or so until the basil is wilted and fragrant.
