Indonesian Spiced Chicken with Coconut (Srundeng Ayam)

SRUNDENG Campur Ayam

Ingredients:

  • 250 grams chicken
  • 1/2 coconut, grated
  • Spice Mix:
    • 1/2 teaspoon coriander seeds
    • 4 cloves garlic
    • 1/2 teaspoon salt
    • 1/2 teaspoon MSG (optional)
    • 1 packet of soy sauce
    • Palm sugar, to taste
    • Galangal, sliced
    • 3 bay leaves

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken thoroughly and then deep-fry it until fully cooked. Once done, remove from the oil and set aside.
  2. Make the Spice Paste:

    • Grind the coriander seeds and garlic together until they form a smooth paste.
  3. Cook the Spice Mix:

    • In a pan, add a little water and heat it. Add the ground spice paste, soy sauce, palm sugar, galangal, and bay leaves. Stir well to combine.
  4. Add Coconut and Chicken:

    • Add the grated coconut to the pan and mix thoroughly with the spices. Continue to stir so that the flavors meld together.
  5. Combine and Simmer:

    • Add the fried chicken pieces to the pan. Stir to ensure the chicken is evenly coated with the spice mixture.
  6. Adjust the Flavor:

    • Let the mixture cook until it’s slightly dry, and the spices have fully infused into the chicken. Taste and adjust the seasoning if needed.
  7. Serve:

    • Once the dish is well-cooked and the flavors are balanced, serve hot with your favorite side dishes.
