SRUNDENG Campur Ayam
Ingredients:
- 250 grams chicken
- 1/2 coconut, grated
- Spice Mix:
- 1/2 teaspoon coriander seeds
- 4 cloves garlic
- 1/2 teaspoon salt
- 1/2 teaspoon MSG (optional)
- 1 packet of soy sauce
- Palm sugar, to taste
- Galangal, sliced
- 3 bay leaves
Instructions:

Prepare the Chicken:
- Clean the chicken thoroughly and then deep-fry it until fully cooked. Once done, remove from the oil and set aside.

Make the Spice Paste:
- Grind the coriander seeds and garlic together until they form a smooth paste.

Cook the Spice Mix:
- In a pan, add a little water and heat it. Add the ground spice paste, soy sauce, palm sugar, galangal, and bay leaves. Stir well to combine.

Add Coconut and Chicken:
- Add the grated coconut to the pan and mix thoroughly with the spices. Continue to stir so that the flavors meld together.

Combine and Simmer:
- Add the fried chicken pieces to the pan. Stir to ensure the chicken is evenly coated with the spice mixture.

Adjust the Flavor:
- Let the mixture cook until it’s slightly dry, and the spices have fully infused into the chicken. Taste and adjust the seasoning if needed.

- Once the dish is well-cooked and the flavors are balanced, serve hot with your favorite side dishes.
