Ingredients

  • Protein: 1/2 chicken (about 1/2 kg) or 1/2 kg tuna
  • Spice Paste:
    • 5 shallots
    • 5 garlic cloves
    • 1 thumb-sized piece of turmeric
    • 2 cm ginger
    • 2 red chilies (adjust to taste)
  • Whole Spices:
    • 4 bay leaves
    • 1 stalk lemongrass
    • 4 kaffir lime leaves
  • Additional Ingredients:
    • 1/2 teaspoon salt
    • 1/4 teaspoon sugar
    • 1 stalk green onion, sliced diagonally
    • 1 tomato, diced
    • Fried shallots, as needed
    • Fresh basil, as needed

Instructions

  1. Prepare the Protein: Cut the chicken into pieces or portion the tuna as desired.

  2. Prepare the Spice Paste: Blend or grind the shallots, garlic, turmeric, ginger, and red chilies into a smooth paste. This forms the base of your dish’s flavor.

  3. Cook the Spices: In a large pan, heat a little oil and sauté the spice paste until it becomes fragrant. Add the bay leaves, kaffir lime leaves, and lemongrass, and cook for a few more minutes to release their essential oils.

  4. Add the Protein: Place the chicken or tuna into the pan, mixing well with the spices. Pour in 500 ml of water, ensuring the protein is well covered. Simmer until the protein is tender and cooked through.

  5. Season the Dish: Once the protein is tender, add the salt and sugar to taste. Adjust seasoning as needed.

  6. Final Touches: Allow the dish to cook until the liquid reduces and the flavors meld together. Stir in the diced tomato, sliced green onion, fresh basil, and fried shallots. Mix briefly to combine all ingredients.

  7. Serve: Once the dish is well-combined and aromatic, remove from heat. Serve hot with steamed rice for a comforting and flavorful meal.

Enjoy this traditional Indonesian dish, perfect for sharing with family or savoring on your own. The blend of spices, herbs, and tender protein makes for a delightful culinary experience.
