Petis Telor Recipe: A Savory Indonesian Delight

Ingredients:

  • 1/2 kg boiled eggs, peeled

For the Spice Paste (Bumbu Halus):

  • 7-8 shallots (bawang merah)
  • 4 cloves garlic (bawang putih)
  • 1/2 thumb-sized piece of turmeric (kunir)
  • 1/2 thumb-sized piece of ginger (kunci)
  • Shrimp paste (petis udang)

For the Aromatic Ingredients (Bumbu Cemplung):

  • Kaffir lime leaves (daun jeruk)
  • Crushed galangal (laos geprek)
  • Large green chili (lombok ijo besar)
  • Bay leaves (daun salam)
  • Lemongrass stalk (serai)
  • Coconut milk (santan)

Instructions:

  1. Begin by boiling the eggs until cooked through. Once boiled, peel the eggs and set them aside.

  2. Prepare the spice paste by finely grinding together the shallots, garlic, turmeric, and ginger. You can use a food processor or mortar and pestle for this.

  3. Heat a little oil in a pan over medium heat. Add the ground spice paste and sauté until fragrant.

  4. Stir in the shrimp paste (petis udang) and cook briefly to incorporate its flavor into the mixture.

  5. Add the aromatic ingredients: kaffir lime leaves, crushed galangal, green chili, bay leaves, and lemongrass. Continue to sauté until the mixture becomes aromatic.

  6. Pour in enough water to cover the ingredients and bring to a boil. Adjust the heat to maintain a gentle simmer.

  7. Season the broth with sugar, salt, and, if desired, a pinch of flavor enhancer. Taste and adjust the seasoning as needed.

  8. Gently add the peeled boiled eggs to the pan, ensuring they are well coated with the spice mixture.

  9. Stir in the coconut milk and let the dish simmer until the sauce has slightly reduced and thickened.

  10. Once the sauce has reached your desired consistency and the flavors have melded together, remove from heat.
