Title: Flavorful Mackerel Delight Sans Fishiness
Ingredients:
- 1 large can of Botan mackerel
- 2 cloves garlic (crushed, minced)
- 4 shallots (finely sliced)
- 3 dried red chilies (sliced)
- 5 red bird’s eye chilies (sliced)
- 1 tomato (cut into pieces)
- 2 bay leaves
- 2 kaffir lime leaves
- 1 lemongrass stalk (crushed)
- 1 galangal root (crushed)
- 200 ml water
- Cooking oil, salt, pepper, seasoning (to taste)
Instructions:
- Heat some cooking oil in a pan and sauté the garlic and shallots until fragrant.
- Add the bay leaves, kaffir lime leaves, lemongrass, and galangal. Stir briefly until aromatic.
- Add the contents of the large Botan mackerel can, including the mackerel and its juices. Cook until it starts to sizzle.
- Pour in the water, add the tomato, salt, pepper, and seasoning. Bring to a boil, then simmer until flavors meld. Taste and adjust seasoning as desired. If you prefer a hint of sweetness, add a touch of sugar.
