Title: Flavorful Mackerel Delight Sans Fishiness

Ingredients:

  • 1 large can of Botan mackerel
  • 2 cloves garlic (crushed, minced)
  • 4 shallots (finely sliced)
  • 3 dried red chilies (sliced)
  • 5 red bird’s eye chilies (sliced)
  • 1 tomato (cut into pieces)
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 1 lemongrass stalk (crushed)
  • 1 galangal root (crushed)
  • 200 ml water
  • Cooking oil, salt, pepper, seasoning (to taste)

Instructions:

  1. Heat some cooking oil in a pan and sauté the garlic and shallots until fragrant.
  2. Add the bay leaves, kaffir lime leaves, lemongrass, and galangal. Stir briefly until aromatic.
  3. Add the contents of the large Botan mackerel can, including the mackerel and its juices. Cook until it starts to sizzle.
  4. Pour in the water, add the tomato, salt, pepper, and seasoning. Bring to a boil, then simmer until flavors meld. Taste and adjust seasoning as desired. If you prefer a hint of sweetness, add a touch of sugar.
  5. Serve hot and enjoy!
