Semur Telur

Ingredients:

  • 1 kg Eggs
  • Spices (Bumbu):
    • 2 red chili peppers
    • 8 candlenuts (kemiri)
    • 6 cloves shallots
    • 3 cloves garlic
    • 2 cm turmeric
    • 2 cm galangal, bruised (laos geprek)
    • 2 cm ginger, bruised (jahe geprek)
    • 1 stalk lemongrass, bruised
    • Bay leaves (daun salam)
    • Palm sugar, to taste (gula merah)
    • Salt, to taste
    • Sweet soy sauce, to taste (kecap)
    • Water
    • Cooking oil for sautรฉing

Preparation Steps:

  1. Boil and Peel the Eggs:

    • Begin by boiling the eggs until fully cooked. Once done, peel the eggs and set them aside.
    • Heat some oil in a frying pan and lightly fry the peeled eggs until they are golden brown. This step helps the eggs absorb the flavors better during cooking. Set aside the fried eggs.
  2. Prepare the Spice Paste:

    • In a mortar or a food processor, grind the red chili peppers, shallots, garlic, candlenuts, and turmeric until you achieve a smooth paste.
