Title: Indonesian Spiced Vegetable Soup with Chicken, Tofu, and Tempeh

Ingredients:

  • 2 packets mixed soup vegetables (including cabbage, carrots, potatoes, green beans, and parsley)
  • 1/2 head cauliflower
  • 3 chicken sausages
  • 20 small chicken meatballs

For the Soup Spice Paste:

  • 5 shallots
  • 4 garlic cloves
  • Black pepper to taste
  • Salt to taste
  • Flavor enhancer (optional)
  • Soy sauce, chili, and lime juice for sambal

For the Braising Paste:

  • 5 garlic cloves
  • Coriander seeds, to taste
  • Galangal, to taste
  • Turmeric, to taste
  • Lemongrass stalks
  • Kaffir lime leaves

Instructions:

  1. Prepare the Vegetables:

    • Clean all the vegetables thoroughly. Cut them into bite-sized pieces and place them into a pot filled with water.
  2. Cook the Soup:

    • While waiting for the water to boil, grind the soup spice paste ingredients (shallots, garlic, black pepper, salt, and flavor enhancer) into a smooth paste.
    • Add the chopped sausages and chicken meatballs into the pot.
  3. Combine Ingredients:

    • Sauté the spice paste with parsley in a separate pan until fragrant. Transfer this mixture into the pot with vegetables and meatballs.
  4. Season and Simmer:

    • Stir well, adding salt and flavor enhancer as needed. Continue to cook, adjusting the seasoning to taste.
  5. Prepare the Braised Chicken, Tofu, and Tempeh:

    • Blend all the braising paste ingredients (garlic, coriander seeds, galangal, turmeric, lemongrass, and kaffir lime leaves) into a smooth paste.
    • Rub this paste thoroughly over the chicken, tofu, and tempeh pieces.
  6. Braise the Meat and Tofu:

    • Place the seasoned chicken, tofu, and tempeh into a pan, adding enough water to cover them.
    • Cook until the water has mostly evaporated and the flavors have absorbed into the meat and tofu.
  7. Final Preparation:

    • Once the braised chicken, tofu, and tempeh are ready and the soup is cooked to your liking, they are ready to be fried or served as desired.
  8. Serve:

    • Enjoy the hearty Indonesian soup with sambal made from soy sauce, chili, and lime juice.
