Ingredients:
- 1 whole carp (ikan mas)
- 2 stalks of lemongrass (sereh)
- 1 bay leaf (daun salam)
- 1 thumb-sized piece of ginger (jahe)
- 1 thumb-sized piece of turmeric (kunyit)
- 10 red bird’s eye chilies (cabai rawit merah)
- 2 cloves of garlic (bawang putih)
- 3 shallots (bawang merah)
- 2 tamarind slices (asam)
- 1 tablespoon salt (garam)
- Sugar to taste
- 1 cup water (adjust to preference)

Prepare the Fish: Begin by thoroughly cleaning the carp under cold running water. Pat the fish dry with paper towels and set aside. To reduce any fishy odor, rub the fish with lime juice and salt. Rinse off the excess lime and salt, then drain.

Make the Spice Paste: In a blender or food processor, combine the shallots, garlic, and turmeric. Blend until you achieve a smooth paste. For the lemongrass and ginger, lightly crush them using the side of a knife to release their flavors.

Cook the Spice Paste: Heat a generous amount of oil in a pan over medium heat. Add the blended spice paste along with the crushed lemongrass, ginger, and bay leaf. Sauté until the mixture is fragrant and the oil begins to separate from the paste.

Add Chilies and Tamarind: Stir in the red bird’s eye chilies and tamarind slices. Cook for a few minutes, allowing the chilies to soften and release their heat.
