Ingredients
-
12 pieces of chicken
-
For the Spice Paste (Bumbu Halus)
- 8 shallots
- 6 cloves of garlic
- 2 cm ginger
- 3 segments of turmeric
- 2 cm kencur (aromatic ginger)
- 5 cm galangal (laos)
- 2 pinches of coriander seeds
- 2 tablespoons of black pepper
-
Additional Spices (Bumbu Pelengkap)
- 4 kaffir lime leaves
- 3 bay leaves
- 2 stalks of lemongrass, bruised
- Salt, to taste
- 3-4 cups of water
Instructions
-
Preparation:
- Gather all the ingredients. Start by finely grinding or blending the shallots, garlic, ginger, turmeric, kencur, galangal, coriander seeds, and black pepper into a smooth spice paste.
-
Cooking:
- In a large pot, pour in 3-4 cups of water. Add the chicken pieces and the prepared spice paste. Stir well to ensure the chicken is coated with the spices.
-
Adding Aromatics:
- Add the kaffir lime leaves, bay leaves, and bruised lemongrass stalks to the pot. These aromatics will infuse the chicken with a fragrant and rich flavor.
-
Simmering:
- Bring the mixture to a boil over medium-high heat. Once the water is boiling, reduce the heat to medium-low. Add salt to taste and allow the chicken to cook and absorb the flavors for approximately 20 minutes, or until the chicken is fully cooked and tender.
-
Serving:
- Once the chicken is cooked through, you can serve it hot as is, or for an added layer of flavor, you can fry the chicken pieces until they are golden brown and crispy. This dish pairs wonderfully with steamed rice and a side of fresh vegetables or sambal for a complete meal.
Enjoy the rich, aromatic flavors of Ayam Ungkep Bumbu Kuning, a traditional Indonesian chicken dish that brings together the perfect balance of spices and herbs!
