Sop Tulang Sapi (Indonesian Beef Bone Soup)
Ingredients:
- 1 kg beef bones with a little meat attached
- 1 liter water
- Spice Paste:
- 12 bird’s eye chilies
- 1 teaspoon black pepper
- 3 small candlenuts
- 5 shallots
- 8 small cloves of garlic
- Tenderizer and Seasoning:
- 1 tablespoon meat tenderizer
- 1 beef bouillon cube
- 1 teaspoon salt (adjust to taste)
- 1 teaspoon MSG (or adjust to taste; optional)
- Garnishes:
- Sliced celery
- Fried shallots
- Tomato slices
Preparation Steps:

Clean the Bones and Meat:
- Thoroughly wash the beef bones and meat to remove any impurities.
- Boil the bones and meat briefly in water, just enough to remove any scum. Discard the boiling water and replace it with fresh water.

Prepare the Spice Paste:
- Grind the bird’s eye chilies, black pepper, candlenuts, shallots, and garlic into a smooth paste.

Sauté the Spice Paste:
- Heat a little oil in a pan and sauté the spice paste until it becomes fragrant.

Combine and Cook:
- Add the sautéed spice paste to the fresh pot of beef bones and meat.
- Add the beef bouillon cube, meat tenderizer, salt, and MSG (if using) to the pot.
- Bring to a boil, then reduce the heat and cook under pressure in a pressure cooker for 30 minutes.

Check and Serve:
- After 30 minutes, release the pressure and check the seasoning. Adjust salt and other seasonings to taste if necessary.
- Serve the soup hot, garnished with sliced celery, fried shallots, and tomato slices.
