Rendang Hati Sapi: A Flavorful Indonesian Beef Liver Stew

Ingredients:

  • 1 kg beef liver
  • 12 shallots
  • 8 garlic cloves
  • 10 large red chilies
  • Coriander
  • Candlenuts
  • Turmeric
  • Galangal
  • Ginger
  • 2 cans of coconut milk (Kara)
  • Palm sugar
  • Sweet soy sauce
  • Bay leaves
  • Lemongrass
  • 1 packet of instant seasoning (Ladaku)
  • Salt
  • Flavor enhancer (optional)
  • Cooking oil
  • Water

Instructions:

  1. Prepare the Beef Liver:

    • Clean the beef liver thoroughly, then boil until tender. Set aside.
  2. Prepare the Spice Paste:

    • Blend the shallots, garlic, red chilies, coriander, candlenuts, turmeric, galangal, and ginger into a smooth paste.
  3. Cook the Spice Paste:

    • Heat oil in a pan and fry the spice paste along with the bay leaves and lemongrass until fragrant.
  4. Combine Ingredients:

    • Add water and palm sugar to the pan with the fried spices. Stir well.
  5. Add the Beef Liver:

    • Incorporate the boiled beef liver into the pan, mixing it thoroughly with the spice mixture.
  6. Incorporate Coconut Milk:

    • Pour in the coconut milk, stirring gently to combine. Be careful not to let the coconut milk curdle.
  7. Season the Dish:

    • Add the instant seasoning and sweet soy sauce. Stir well to blend all the flavors.
  8. Simmer:

    • Allow the mixture to simmer until the liquid reduces and thickens. Adjust the seasoning with salt and flavor enhancer if needed.
  9. Serve:

    • Once the sauce has thickened and the flavors have melded together, remove from heat. Serve hot and enjoy!
