Instructions:
-
Prepare the Beef:
- Clean the beef ribs thoroughly. Place them in a pot and bring to a boil. Cook the beef until it is partially tender. Drain and set aside.
-
Make the Spice Paste:
- In a mortar and pestle or food processor, grind the shallots, garlic, bird’s eye chilies, candlenuts, coriander seeds, ginger, turmeric, and galangal into a fine paste.
- Smash the lemongrass and galangal lightly to release their flavors.
-
Cook the Spice Paste:
- Heat a generous amount of cooking oil in a pan over medium heat.
- Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.
- Add the palm sugar and continue cooking for a few minutes.
-
Combine Ingredients:
- Add the black pepper, bay leaves, kaffir lime leaves, lemongrass, and galangal to the pan. Stir well to combine.
- Add the partially cooked beef ribs and stir to coat them with the spice mixture.
- Pour in some of the beef broth from the earlier boiling to create a flavorful base. Add more if necessary to cover the meat.
-
Season the Dish:
- Add salt, seasoning powder, and sweet soy sauce. Stir to mix.
- Allow the dish to simmer gently for about 15 minutes, or until the beef is tender and the flavors are well combined.
-
Final Touches:
- Add the chopped tomatoes and sliced scallions to the pot. Cook for an additional few minutes until the tomatoes are soft and the scallions are slightly wilted.
-
Serve:
- Taste and adjust seasoning as needed.
- Remove from heat and serve hot with steamed rice or your choice of accompaniment.
