Tongseng Tetelan Sapi is a flavorful Indonesian beef stew characterized by its aromatic spices and savory-sweet taste. Ingredients:

  • 500 grams of beef ribs (tetelan sapi)
  • 8 shallots (bawang merah)
  • 4 garlic cloves (bawang putih)
  • 1 tablespoon coriander seeds (ketumbar)
  • 1 teaspoon black pepper (merica)
  • 4 candlenuts (kemiri)
  • 10 bird’s eye chilies (cabe rawit setan), adjust to taste
  • 2 tomatoes, chopped
  • 2 scallions (daun bawang), sliced
  • 2 bay leaves (daun salam)
  • 2 kaffir lime leaves (daun jeruk)
  • 1 stalk lemongrass (sereh), smashed
  • 1 thumb-sized piece of galangal (lengkuas), smashed
  • 1 thumb-sized piece of ginger (jahe), smashed
  • 1 thumb-sized piece of turmeric (kunyit), peeled and smashed
  • 1 tablespoon palm sugar (gula merah), adjust to taste
  • 2 tablespoons sweet soy sauce (kecap manis)
  • Salt (garam), to taste
  • Seasoning powder (Sasa or Royco beef seasoning), to taste
  • Cooking oil for sautéing

Instructions:

  1. Prepare the Beef:

    • Clean the beef ribs thoroughly. Place them in a pot and bring to a boil. Cook the beef until it is partially tender. Drain and set aside.
  2. Make the Spice Paste:

    • In a mortar and pestle or food processor, grind the shallots, garlic, bird’s eye chilies, candlenuts, coriander seeds, ginger, turmeric, and galangal into a fine paste.
    • Smash the lemongrass and galangal lightly to release their flavors.
  3. Cook the Spice Paste:

    • Heat a generous amount of cooking oil in a pan over medium heat.
    • Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.
    • Add the palm sugar and continue cooking for a few minutes.
  4. Combine Ingredients:

    • Add the black pepper, bay leaves, kaffir lime leaves, lemongrass, and galangal to the pan. Stir well to combine.
    • Add the partially cooked beef ribs and stir to coat them with the spice mixture.
    • Pour in some of the beef broth from the earlier boiling to create a flavorful base. Add more if necessary to cover the meat.
  5. Season the Dish:

    • Add salt, seasoning powder, and sweet soy sauce. Stir to mix.
    • Allow the dish to simmer gently for about 15 minutes, or until the beef is tender and the flavors are well combined.
  6. Final Touches:

    • Add the chopped tomatoes and sliced scallions to the pot. Cook for an additional few minutes until the tomatoes are soft and the scallions are slightly wilted.
  7. Serve:

    • Taste and adjust seasoning as needed.
    • Remove from heat and serve hot with steamed rice or your choice of accompaniment.
