Ingredients:
- 250 grams beef, cut into bite-sized pieces
- 1 small head cabbage, shredded
- 1 to 2 green or orange tomatoes, sliced
- 2 stalks green onions, chopped
- 3 to 5 bird’s eye chilies, sliced
- 2 curly red chilies, sliced
- 2 kaffir lime leaves
- 2 bay leaves
- 1 stalk lemongrass, bruised
- 1 cm galangal, bruised
- 2 shallots, thinly sliced
- 1 clove garlic, thinly sliced
- 1/2 small pack coconut milk (Kara brand or similar)
For the Spice Paste:
- 3 shallots
- 1 clove garlic
- 1 cm ginger
- 0.5 cm turmeric
- 2 candlenuts
- 1 teaspoon coriander powder
- 1 teaspoon ground black pepper
- Salt to taste
- Sugar to taste
- 1 tablespoon beef flavoring seasoning (Royco or similar)
Instructions:

- In a blender or food processor, combine the shallots, garlic, ginger, turmeric, candlenuts, coriander powder, black pepper, salt, and sugar. Blend until you achieve a smooth paste.

- Heat a bit of oil in a large pot or skillet over medium heat. Add the sliced garlic and cook until fragrant. Add the sliced shallots and continue to cook until they become translucent.

- Incorporate the prepared spice paste into the pot. Stir in the bay leaves, kaffir lime leaves, lemongrass, and galangal. Cook for a few minutes until the paste becomes aromatic.

- Add the beef pieces to the pot, stirring to coat them evenly with the spice mixture. Pour in 400 ml of water and bring the mixture to a boil. Reduce the heat and let it simmer until the beef is tender.
