  2. Prepare the Aromatics and Chilies:

    • Finely chop the garlic and shallots.
    • Slice the large onion thinly.
    • Chop the red chilies, green chilies, and bird’s eye chilies. Adjust the amount according to your preferred spice level.
  3. Cooking the Tongseng:

    • Heat a sufficient amount of oil in a large pan or wok over medium heat.
    • Add the chopped garlic and shallots, stirring constantly until they turn golden brown and fragrant.
    • Add the sliced onion and continue to stir until it softens and becomes translucent.
    • Add the beef pieces to the pan, stirring to combine with the aromatics.
    • Incorporate the chopped red chilies, green chilies, and bird’s eye chilies into the mixture.
    • Pour a small amount of water into the pan to create a bit of sauce, stirring to combine.
  4. Seasoning and Simmering:

    • Add salt, Masako seasoning, and a pinch of granulated sugar to the pan. Stir well to distribute the seasonings evenly.
    • Drizzle in some sweet soy sauce (Kecap Manis) to add sweetness and depth of flavor. Adjust the amount to your taste.
    • Cover the pan and let it simmer on low heat until the aroma is fragrant and the flavors have melded together.
  5. Taste and Serve:

    • Taste the dish and adjust the seasonings if necessary. Ensure that the flavors are well-balanced and to your liking.
    • Once the seasoning is perfect, your Tongseng Daging Sapi is ready to be served.
    • Serve hot with steamed rice for a satisfying meal.
