Embark on a culinary adventure with this vibrant and flavorful Indonesian dish, Daging Sapi Sambal Matah. This recipe brings together tender beef, a savory mix of traditional spices, and the fresh, zesty kick of sambal matah. Perfect for those who crave a spicy, aromatic meal, this dish combines the richness of beef with the tang of lemongrass and lime, balanced by the heat of fresh chilies.

Ingredients

For the Beef:

  • 200 grams of beef, diced into small cubes

For the Boiling Seasoning:

  • 1 tablespoon teriyaki sauce
  • 1 tablespoon sweet soy sauce
  • Ground coriander to taste
  • Ground black pepper to taste

For the Sambal Matah:

  • 10 bird’s eye chilies (cabe rawit), sliced thinly
  • 7 shallots (bawang merah), thinly sliced
  • 3 stalks lemongrass (serai), lightly crushed
  • 1/2 lime (jeruk nipis), juiced
  • 3 kaffir lime leaves (daun jeruk), finely sliced
  • Sugar, to taste
  • Salt, to taste
  • Beef bouillon (royko sapi), to taste

For Cooking:

  • 5 tablespoons cooking oil

Instructions

  1. Prepare the Beef:

    • Dice the beef into small, even cubes. This ensures that the meat cooks uniformly and absorbs the flavors effectively.
  2. Boil the Beef:

    • In a pot, add the diced beef along with the teriyaki sauce, sweet soy sauce, ground coriander, and ground black pepper.
    • Bring to a boil, then simmer until the beef is tender. This step infuses the beef with rich, savory flavors.
  3. Fry the Beef:

    • Once boiled, drain the beef from the broth and heat oil in a pan.
    • Fry the beef cubes in the oil until they are half-cooked. This gives the beef a slight crisp on the outside while keeping it tender inside.
  4. Prepare the Sambal Matah:

    • Slice the bird’s eye chilies and shallots thinly. Lightly crush the lemongrass stalks to release their essential oils.
    • In a bowl, combine the sliced chilies, shallots, and crushed lemongrass.
    • Add the kaffir lime leaves and mix well.
    • Squeeze in the lime juice, and season with sugar, salt, and beef bouillon to taste. Adjust the seasoning to your preference.
  5. Combine and Serve:

    • In the same pan used for frying the beef, add a little more oil if needed.
    • Sauté the sambal matah mixture until fragrant and the shallots are tender.
    • Add the fried beef to the pan and stir well to combine with the sambal matah.
    • Adjust seasoning if necessary, then serve hot.

This Daging Sapi Sambal Matah makes a fantastic dish for any meal, offering a burst of flavors and a touch of Indonesian culinary tradition to your dining table. Enjoy the perfect harmony of tender beef and vibrant sambal matah with every bite.
