Spicy Bumbu Chicken (Ayam Bumbu Pedas)

Ingredients:

  • 500 grams chicken breast
  • 5 red chilies
  • 3 large red chilies
  • 3 candlenuts
  • 5 coriander seeds
  • 6 shallots
  • 4 garlic cloves
  • 1 tomato
  • 1 tablespoon sweet soy sauce
  • Salt, to taste
  • Palm sugar, to taste
  • Granulated sugar, to taste
  • Pepper, to taste
  • Water, as needed
  • Cooking oil, for sautรฉing

Instructions:

  1. Prepare the Chicken:
    Begin by cleaning the chicken breasts thoroughly. Place the chicken in a pot and add enough water to cover it. Bring to a boil, then simmer for about 20 minutes or until the chicken is tender. Once cooked, remove the chicken from the pot and set aside.

  2. Prepare the Spice Paste:
    Heat a small amount of oil in a frying pan over medium heat. Add the shallots, garlic, red chilies, large red chilies, tomato, and candlenuts. Fry briefly until fragrant and softened.

  3. Grind the Spices:
    Transfer the fried ingredients to a mortar and pestle or food processor. Grind the mixture into a smooth paste. Add a small amount of palm sugar to the paste to help thicken it and enhance the flavor.

  4. Cook the Spice Paste:
    In a separate pan, heat a little oil and sautรฉ the spice paste until it becomes aromatic. Continue cooking until the paste darkens slightly and releases its fragrant oils.

  5. Season the Paste:
    Once the paste is aromatic, add granulated sugar, salt, pepper, and sweet soy sauce. Stir well to combine. If the mixture appears too dry, add a small amount of water to adjust the consistency.

  6. Combine with Chicken:
    Add the cooked chicken breasts to the pan with the spice paste. Stir well to coat the chicken evenly with the paste. Allow the chicken to simmer in the sauce, so it absorbs the flavors and the sauce thickens further.

  7. Final Touches:
    Taste the sauce and adjust the seasoning if needed. Once the chicken is well coated and the sauce has thickened to your liking, remove from heat.

  8. Serve:
    Garnish with fried shallots for added texture and flavor. Serve the spicy bumbu chicken hot, accompanied by steamed rice to soak up the delicious sauce.
