Ingredients
-
For the Chicken and Tofu:
- 1 kg chicken, cut into 8 pieces
- 5 pieces of white tofu, each cut into 4 pieces
- Juice of 1 lime (for marinating)
-
For Bumbu A (Marinade):
- 5 cloves garlic
- 2 cm ginger
- Salt to taste
-
For Bumbu B (Spicy Sauce):
- 100 grams red curly chilies
- 9 shallots
- 3 tomatoes
- Salt to taste
- Juice of 1 lime
Instructions
-
Prepare the Chicken and Tofu:
- Clean the chicken pieces thoroughly and cut them into 8 pieces.
- Cut each tofu block into 4 pieces. Squeeze the tofu slightly to remove excess moisture.
- Marinate both the chicken and tofu with the juice of 1 lime. Set aside.
-
Make Bumbu A (Marinade):
- Blend the garlic and ginger together until smooth. Add a little water if necessary to achieve a paste-like consistency.
- Mix this marinade with the chicken and tofu. Let it sit for about 5 minutes to allow the flavors to infuse.
-
Fry the Chicken and Tofu:
- Heat oil in a frying pan. Fry the tofu pieces first until they are golden brown and crispy. Remove and set aside.
- In the same pan, fry the marinated chicken pieces until cooked through and browned. Remove and set aside.
-
Prepare Bumbu B (Spicy Sauce):
- Blend the red curly chilies, shallots, and tomatoes together until smooth. Add salt to taste.
- Heat a small amount of oil in a pan. Pour in the blended chili mixture and cook in the oil left from frying the chicken. This will infuse the sauce with the flavors of the chicken.
- Add the juice of 1 lime to the sauce. Cook until the raw smell of the chilies disappears, stirring occasionally.
-
Combine and Serve:
- Once the sauce has cooled slightly, mix it with the fried chicken and tofu pieces.
- The lime juice in Bumbu A helps remove the fishy smell from the chicken, while the lime juice in Bumbu B reduces the pungency of the chilies, balancing the flavors.
-
Enjoy!
- Serve the Balado Ayam Tahu hot with steamed rice for a complete meal. The spicy and tangy sauce perfectly complements the crispy tofu and tender chicken.
